I am always on the lookout for food that tastes good and is good for me. As you know, that isn't always easy to do! So when I was asked to do a review of Weight Watchers Yogurt, I was eager to get on board.

I was given 6 flavors of Weight Watchers Yogurt to sample: Berries 'n Cream, Cherry Cheesecake, Amaretto Cheesecake, Apple Pie a la Mode, Caramel Spice Cake and Vanilla. That is what I said when it came in the mail. It looks like a normal trash can, but it is way better. The lid shuts so softly and you can lock it which is wonderful if you have a 3 year old. Full disclosure: I was given $55 from CSN to review any product from the website. My opinion is my own and I am very happy with this purchase.

Gingerbread Pop-Tarts Ice Cream Pie 12/13-12/25

This is one of my favorite desserts made even better by adding a Gingerbread Pop-Tarts crust. This is a dessert that will please everyone at your table. Enjoy!

Gingerbread Pop-Tarts Ice Cream Pie (Makes 2 pies)

What you will need:

(2) 8" Pie tins

8 Gingerbread Pop-Tarts

(2) 1/2 gallons of ice cream (I usually put chocolate on the bottom and a different flavor on top)

1 package semi-sweet chocolate chips

1 cup whipping cream (not whipped)

To make crust:

Put Gingerbread Pop-Tarts in a food processor and process the Pop-Tarts until they are very fine crumbs. Divide equally into (2) 8" pie tins and press the crumbs firmly into the bottom and up the sides of the tin. You can leave it like that or you can bake the crusts in a 400 degree oven for 10 minutes. This will make the crust more cookie-like. Like pie crusts cool completely before filling with ice cream.

To fill the pies:

Spoon 1/2 the container of chocolate ice cream in each cooled pie crust. You might need to let the ice cream sit on the counter 5 minutes or so until it is soft before you scoop it into the crust. Put pies into the freezer to harden.

While pies are in the freezer make your chocolate sauce by putting your chocolate chips and whipping cream in a heavy sauce pan. Melt the chocolate until smooth and then let mixture cool to room temp.

Take pies out of the freezer and drizzle chocolate sauce over the 1st ice cream layer. Place back into the freezer to harden chocolate sauce.

When sauce is hardened, remove pies from freezer and spoon 2nd flavor of ice cream on top. I used a seasonal Gingersnap ice cream that was delicious! I like to mound the ice cream more in the center so that it is kind of "dome" like. Drizzle top with remaining chocolate sauce. Place in freezer to harden.

When hardened you can put it in a large Ziplock freezer bag to store. Your second pie can keep really well in the freezer until you need it. (if it lasts that long)

How to Avoid Holiday Food Traps! Ends 12/28/10

'Tis the season of family parties, office parties and church parties. Parties with friends and lots and lots of awesome food! Here are some tips on how to go to the parties but stay in control of your eating.

Just like in everyday day life, it all comes down to planning and preparation. For example:

Before the party or event:

*Eat a small, healthy snack (like Laughing Cow Cheese) to keep from being so hungry at the party that you want to eat everything in sight.

*Drink water before the party to make you feel more full.

*Set a limit of how many appetizers you will eat and stick to it! Choose whatever you want to eat, but stick to your limit.

*You may want to consider bringing a healthy option to share with others at the party. Maybe something like this:

Fruit for Dessert Fruit Dip

1 container of fat free or light whipped topping, thawed
2 containers of fat free or light raspberry yogurt

Just mix together and serve with fresh fruit.

At the party:

*Use a small plate at the buffet. Fill up on fruits and vegetables.

*Limit alcohol. There are lots of calories in those drinks, but they can also hinder your judgment. Drink club soda or water instead.

*Don't waste your calories on "okay" tasting food. Eat smaller portions of what really satisfies you.

*Make the focus on other people and great conversation instead of just the food. Speaking as a "foodie" this is difficult for me!

I hope these tip can help you over these next few weeks that will be full of temptation! Most importantly....Have a great holiday and enjoy your friends and family!

Dr. Oetker Ristorante Quattro Formaggi Pizza

I was recently sent some samples of Dr. Oetker Ristorante Quattro Formaggi Pizza to try. I was glad to have this pizza all to myself. Lucky for me, my husband and kids don't have a taste for Blue Cheese. I, for one, love the stuff! This pizza was delicious. I love the thin, crispy crust and the cheese was delicious. The four cheeses are: Mozzerella, Edam, Emmental and Blue Cheese. The blue cheese especially was so creamy. It gave a very grown up and gourmet feel to this pizza. I look forward to trying the other varieties such as: Spinaci, Mozzarella, Pomodori, Funghi, Vegetale, Speciale and Generosa. You can find these pizzas in your grocer's freezer section.

Ghirardelli Review, Recipes and $100 Visa Gift Card Giveaway!

It was an average, everyday Wednesday. Not too hot. Not too cold. Work went fine. Nothing too exciting, when a knock came at my door.

I opened the door and saw a huge box that was covered in some cool, outer space looking silver wrap. I picked up the heavy box when it struck me what this box might contain. I remembered that I had been selected to do a review for Ghirardelli and that I would be receiving some samples! Oh boy!

So I ripped open the box and was thrilled with what I found inside:

*10 bags of All Natural Chocolate Chips (two each): white, milk, semi-sweet, mini semi-sweet and 60% cocoa
*12 All Natural Baking Bars (2 each): white, milk, semi-sweet, 60% cocoa, 70% cocoa and unsweetened
*2 canisters of Cocoa Powder: Natural Unsweetened and Sweet Ground Chocolate
*1 large bag of Peppermint Bark Squares
*1 large bag of Chocolate Caramel Squares
*1 WONDERFUL Ghirardelli Chocolate Cookbook

Talk about a baker's ultimate dream come true! Now there is just one problem.....what do I make first??

I decided to try a recipe from the Ghirardelli Chocolate Cookbook. WOW! What a beautiful book. It gave the history of the company, the different types of chocolate, how to melt them and a whole bunch of interesting facts about chocolate.

I decided that I wanted to try the Buttery Breakfast Scones with Chocolate Chunks. How could you go wrong with that? What a wonderful way to start out the day. These were like warm, buttery and cakey chocolate chip cookies that would be wonderful with coffee or hot chocolate.

Look at those wonderful chocolate chunks!

And I wouldn't be "me" if I didn't drizzle a little bit of extra melted chocolate on top. I'm not too proud to admit that I have a drizzling problem. :)

Next, I decided to make my own recipe of Chocolate Covered Caramel and Coconut Pretzel Rods. I used the 60% cocoa to cover the pretzels and it gave it such a distinct and exotic taste. This ain't your everyday chocolate! I thought these would make great gifts to give away during the holidays.

Here is how I made them:

Chocolate Covered Caramel and Coconut Pretzel Rods

Things to get:
Pretzel rods
Sweetened coconut
Ghirardelli Chocolate Chips (whatever kind you like. I used 60% cocoa.)
Ghirardelli White Chocolate Chips (optional)
Caramel ingredients (You can make your own using the recipe below or melt pre-wrapped caramels for convenience.)

1. Make a batch of caramel or melt your pre-wrapped caramels over low heat.

Homemade Caramel
1c. Karo syrup
1c. Brown sugar
1c. White sugar
1 stick of butter
1 can sweetened condensed milk

Put first 5 ingredients in a large sauce pan over medium heat and stir until melted and combined. Bring to a boil and stir for five minutes. Be careful to keep stirring so that it doesn't start to burn on the bottom of the pan. Take caramel off the burner after 5 minutes.

2. Put the hot caramel in a deep container. I used my Pyrex 4 cup measuring cup.

3. Prepare a couple cookie sheets lined with buttered wax paper.

4. Dip pretzel rod in caramel, about 3/4 of the way and let it drip off any excess caramel. Then lay the rod on the cookie sheet.

5. Repeat with remaining pretzels.

6. Put cookie sheets in the fridge to help set up caramel.

7. Once caramel is set, lift up each pretzel rod off the wax paper and mold caramel around the rod since it will puddle on the sides as it cools.

8. Roll caramel covered pretzel roll in shredded coconut and gently press coconut into the caramel.
9. Prepare the cookie sheets again with new pieces of wax paper. No butter required for this step.

10. Melt chocolate in the microwave or double boiler and place melted chocolate in a deep container like a tall cup. Dip caramel and coconut covered pretzel rods in melted chocolate. At this point, you can also roll the rods in chopped and toasted almonds or pecans.

11. Place chocolate covered pretzel rods on cookie sheets and place in fridge to set up for at least 15 minutes.

12. In a zip lock baggie, melt the Ghirardelli white chocolate chips in the microwave 20 seconds at a time. When completely melted, cut a tiny hole in the corner and drizzle the chocolate on the rods.

13. Place back into the fridge to set up.

Aren't they pretty?
I had so much fun baking and trying to come up with all the different ways I could use my Ghirardelli chocolate jackpot. I just love to work with quality chocolate that melts perfectly and Ghirardelli did not disappoint. I would without hesitation, recommend that you use Ghirardelli chocolate for all your holiday baking. It's the Most Wonderful Time of the Year

Can you believe that it is that time of year again?

The holidays are right around the corner and that means lots of delicious food and less time to exercise! And that can lead to weight gain. There has got to be a way to enjoy the holidays and also stick to your exercise program. RIGHT? Right!

Here are some suggestions:

*Set realistic goals: It might be unrealistic for you to do 1 hour of cardio 5 days a week during the holidays. You might be like me and have an "all or nothing" type attitude. I say to myself, "If I can't get my hour of cardio in, then I'm just not going to do any." That's why it may be better to set a goal of 20 minutes of high intensity cardio 5 days and week instead of an whole hour. It's much easier to find 20 minutes than a hour. If you are feeling extra energetic you can always add more minutes to your workout!

*Remember the benefits of exercise: You know how you feel after a good workout? Empowered, strong, beautiful, confident. How do you feel when you don't exercise? Frumpy, guilty, weak, tired. During the holidays you want to feel great and look great when you are with family and friends. Exercise and proper hydration gives you a healthy glow and an inner confidence that is so attractive. Give yourself more energy during the holidays by exercising!

*Join forces with a friend: A few weeks ago, a couple friends from church and I, decided to be accountability partners. Every Friday we text our weight to each other and comment on how we did that week with our eating and such. That has been a great help for me. It is always a nice for me to have a partner in this, my greatest battle! Get a friend, spouse or family member with whom you can go for walks, go to the gym or just report to everyday. Inspire each other to stay fit during the holidays!

*Who needs a treadmill? Play outside: There are some really fun things that you can do out in the cold that burn a ton of calories!!! Join in the Turkey Bowl football game, ice skate, run up and down the hill while sledding with the kids, have a snowball fight, shovel snow, go cross country skiing or snowshoeing. Look for fun traditions that will keep your family fit!

*LAUGH: What did you expect from a post sponsored by Laughing Cow Cheese! :) But seriously....Studies have been done on this topic and it has been shown that the body burns up to 20% more calories when having a good belly laugh! Watch a fun comedy together, play cards or a board game together. Shed the stress and a few more calories along the way.

Pumpkin Pie Pop-Tarts Caramel Apples

Have you tried the new, Limited Edition Pumpkin Pie Pop-Tarts yet? If not you definitely need to do so....NOW! I have been a loyal fan of the Brown Sugar Pop Tarts for years, but the Pumpkin Pie Pop-Tarts are my new favorite. The pumpkin pie spice is not overpowering and it is just enough filling to make you feel like you are eating a thin slice of pumpkin pie. What a treat!

I decided that I would roll a caramel apple in the Pumpkin Pie Pop-Tarts crumbs to combine the the flavors of my two favorite pies. Apple and pumpkin. You can eat this right off the stick or cut the apple off the stick and cut into slices. I guess it's a more dignified way to eat this delicious treat. However you decide to eat this...I'm sure you will agree that it is the best of both pies!

Here is how you make it.

Pumpkin Pie Pop-Tarts Caramel Apples

Things you need:

6-8 apples (any kind, but I used tart Granny Smith's)
wooden dowels or craft sticks for each apple
2 packages pre-wrapped caramels or caramel ingredients (see recipe below)
wax paper
cookie sheet
butter
12 Pumpkin Pie Pop-Tarts, coarsely chopped
fall ribbon to decorate apples

1. Place wax paper on cookie sheets. Next, butter the waxed paper to make sure that the caramel apple won't stick.

2. Make some caramel or you can use the pre-wrapped found in the candy section of your grocery store. Here is my caramel recipe:

1c. Karo syrup
1c. Brown sugar
1c. White sugar
1 stick of butter
1 can sweetened condensed milk

Put first 5 ingredients in a large sauce pan over medium heat and stir until melted and combined. Bring to a boil and stir for five minutes. Be careful to keep stirring so that it doesn't start to burn on the bottom of the pan. Take caramel off the burner after 5 minutes.

3. After you have made your caramel or melted your unwrapped caramels according to package directions, put wooden craft sticks or dowels into your apples.

4. Dip apples in caramel one at a time. Cover the whole apple letting the excess caramel drip back into the pan.

5. Place caramel covered apples on buttered wax paper on cookie sheet and place in refrigerator for 5-10 minutes to cool.

6. Take apples out of refrigerator and roll in chopped Pumpkin Pie Pop-Tarts. Press crumbs into caramel and replace on new piece of wax paper.

7. Replace in refrigerator to set up.

8. When ready to serve, decorate with fall ribbon around the stick. Enjoy!

I Might as Well Exercise.....

Ahhhhh....exercise!

I have a love/hate relationship with it. What about you? I always feel great when I'm done, but I DREAD getting started.

When I was a teenager I had a Garfield poster that read:

"I might as well exercise, I'm in a bad mood anyway."

That pretty much sums up my attitude about exercise.

To get myself motivated to exercise I have tried several techniques:

1. I keep an exercise calendar and put a sticker or "gold star" every day that I get my workout. I start to see that I am on all roll and I don't want to break the chain. I plan my workout on the calendar for the week so that I don't have any excuse not to get it done.

2. I set my DVR to record my favorite shows and I tell myself that I am not allowed to watch my shows unless I am on my recumbent bike or treadmill. This has been very effective in getting me out of bed!

3. I used to work just a couple miles away from my home. I would leave about 30 minutes before I was expected at work and walk there. It was a really nice walk. I had to go to work, so I thought that I might as well walk there and get my exercise done as well.

4. I've always required great tunes while I exercise. As I have "matured" I have really enjoyed books on tape and podcasts that can be downloaded to my ipod. They keep my mind interested and I get so caught up in the story or the discussion that time flies!

5. And then there is always this way of thinking that gets me to exercise: "If I exercise this morning....I'll be able to eat something yummy tonight when I go out!"

The secret is: Whatever gets you to exercise...DO IT! Make it fun. Give yourself goals and incentives. Remember how good a morning workout makes you feel when you can't drag yourself out of bed at 5 am!

One particular time I was actually effective. I was trying to help my friend quit smoking. I remember very well the first few days without chocolate. I was, in a word, irritated, but then I calmed down and accepted my new sense of control. When I was offered chocolate ice cream, candies or desserts, I explained my pact and no one was offended.

The best thing was that I didn't swear off all sweets, just chocolate and I still ended up slowly and painlessly losing weight. I didn't have a scale, but I could just tell by the way my clothes fit. I lived in Malta at that time and walked everywhere, so that helped too.

In short, it was a good experience but if you have seen my main blog, Cheat Day Cafe, you will see that I am back on chocolate as one of my main food groups. What can I say...I'm weak AND I live in the most famous chocolate town in America! A woman can handle only so much!

One Saturday morning I was up early getting ready for by 9 year old daughter's belt ceremony for karate. She was going to be receiving her junior black belt and I was pretty excited for her. I decided to wear white capri pants and a black shirt in the spirit of her getting her black belt.

It was getting close to the time that we needed to be out the door, but I figured that I would have enough time to make a quick shake for breakfast. I also thought it might be smart to make two servings so I could keep one in the fridge for a snack later in the day. Not very often, but sometimes I get on a protein shake kick. I just get in a phase where I drink a protein shake for breakfast and dinner and eat a big lunch in between. They are really filling and I just feel better when I eat light in the evening.

I had a blender that was marketed for making smoothies. It had a spout attachment on the bottom of the jug that was used as a "tap" to pour the smoothie into a glass. I never used that attachment, so there was a way you could unscrew that attachment and screw on a tab that would plug up that hole. I just always kept that little tab attachment on.

So, I added my double portion of water, protein powder and ice to the blender and carefully replaced the lid and pressed the "high" button. The blender immediately started to "whirr" and all of a sudden I was being shot in the stomach by a blast of cold, chocolaty water! Someone (probably under 5 feet tall) had not screwed on the tab attachment all the way and it shot off when I pressed the button. I screamed and tried to find the stupid "off" button but I was blinded by the protein shake being sprayed in my face. I finally found the plug and yanked it!

I think the funniest part was my family who witnessed the whole event. When I unplugged the blender, it went silent and it was like they paused to see how I was going to react before they did. I busted out laughing and then they did too. I probably could have cried or yelled, but I'm glad that my first reaction was to laugh!

I had to hurry and change into a new outfit to go to the belt ceremony and my good hubby cleaned up the mess. I found myself laughing at the incident all day. I had seen something similar happen on TV all my life, but never a straight shot into the stomach! I guess that's what I get for trying to eat healthy. :)

Ahhh lunch. I remember those days as a kid, looking forward to lunch to see what Mom packed for me in my brown paper bag. Usually it was a peanut butter and honey sandwich (still my favorite), chips, a homemade cookie, a piece of fruit and a drink. Sometimes my mom would write me little notes on my napkin that she would put in my lunch bag. I loved that! Some days it was a joke or a riddle and other days it was a quick, "I'm thinking about you. Love you, Mom".

That meant a lot to me. Obviously, because I still remember it. And now that I am a mom, it brings tears to my eyes to realize how it is the little things, the simple notes, hugs and "I love yous" that make the biggest impression in the mind of a child.

I, like many of you out there, am a working mom. I miss eating lunch with my kids all week. I am amazed at how the kids all rush to me when I get home! They miss me and need my attention. I try to give each of them some of my time, but it's so hard when I am exhausted and have work to do around the house.

My husband and I used to go on "dates" with the kids for one on one time. My husband would take one and I would take the other. We pretty much stopped that when our third child came around. Life got too hectic. Can anyone relate?

I'd love to get back to giving that individualized attention to the kids. A weekend lunch date would be so fun. And as my kids are getting older (2, 7, and 9) I think they need that one on one time even more. They need to feel special. They need to be able to speak freely. I have been amazed at the questions I get asked when I am alone with my 9 year old daughter! But I am thankful that she feels she can ask me anything.

Let's set a lunch date with our kids or grand kids and see if relationships can be strengthened, confidence can be built and special memories can be made. Lunch can be as simple as a good old peanut butter and jelly sandwich. Think of the child's interests and plan an activity that you can do together.

It's as simple as that.

One of my daughter's favorite activities is baking. She loves to create something delicious and let the whole family sample her treats. She also loves music. I've got a ton of old CD's down in the basement. We could listen to some of my favorite songs and she could pick out some CD's to add to her collection. I gave her my Michael Jackson "Thriller" CD and it changed her world! It's been fun to see her grow up and find new interests and talents.

My 7 year old son loves to play basketball. He actually saved up $77 dollars to pay for half (we paid for the other half) of a basketball standard to put up in our front yard. I think he would love to play a few games of H-O-R-S-E and maybe I can teach him some of my moves. :)

The 2 year old boy would love to just wrestle on the floor, play with a big balloon or go for a walk. He is easy. He just wants to play!

None of these activities cost any money, but the value of the time you spend together with those kids is priceless!
Just as that little napkin tucked in my lunch sack at school, it's the small things that mean so much and that are remembered.

Oh, woe is me!

Treadmill Comedy. Giveaway Ends 8/15.

I was asked to share a story about how fitness can be funny. I feel fortunate that I don't have a story about falling off the treadmill, but I did have a close call!

A couple years ago I worked out with a trainer and was really motivated to get in great shape. I went to the gym 5 days and week and I had my routine that always challenged me. I was feeling really motivated and ready for a great workout. I set the treadmill to the highest incline and had my trusty ipod to help me burn some serious calories.

I usually listen to music to motivate me and get me going, but that particular day I decided to listen to a podcast. I thought I would listen to a talk radio program to occupy my mind for the long haul. So I was walking and sweating and listening to my ipod, when all of a sudden the talk show host did something that made me crack up. He started singing along with Barbara Streisand's song "Memories" in the most dramatic voice he could muster. The funny thing was that the music track was not included on the podcast, so his voice sounded TERRIBLE! I tried my hardest not to break out laughing or even smile. I mean how strange would that look? Here is a woman in the middle of an intense workout who bursts out laughing for no apparent reason. But as much as I tried, I couldn't keep it in and got a few funny looks from from the muscle heads.

Oh well. That was the first time, but it certainly wasn't the last time that happened! Now I just tap my earphones and say really loud, "I'M LISTENING TO SOMETHING FUNNY". (I should probably be more embarrassed about that!)

How to Get Some Good Zzzzz's

Sleep is precious. Don't you think? So why do I stay up so dang late every night?

I think it is because it is the only quiet part of my day. I don't need to elaborate do I? I love the time after I put the kids to bed and there is peace and quiet. I can do what I want to do. I can finally relax. That is when I like to get on the computer, watch a movie (while folding laundry), read or exercise. All of a sudden, it's after midnight and I have to get up at 6am to go to work! So, why is it important to get enough sleep?

Here are some of the benefits of good sleep:

*Improves your mood
*Can help with weight control because when you are exhausted you are more likely to reach for sugary, high fat and high carbohydrate foods to give you quick energy.
*Keeps your heart healthy
*Sleep reduces stress levels
*Reduces inflammation
*Gives the body time to repair
*Improves your memory and concentration

Okay. I'm sold! Now, how do I get better sleep?

*Get on a schedule.
*Don't eat 2 hours before bed. Especially heavy or spicy foods.
*Exercise!!!!
*Make sure your room is DARK. No TVs or computers on.
*Keep your room at a cool temperature.
*Create white noise. I sleep with a fan on in my room every day of the year for that very reason.
*Only use your bed for sleep. Otherwise you might associate your bed with working, studying, list making, TV watching, etc.
*Relax before bed. Take a shower, listen to soft music, do some light reading.
*Don't drink too much before bed. That will just lead to late night bathroom trips!
*Avoid caffeine, nicotine and alcohol before bed. Caffeine can affect some people up to 10 hours before bed. So limit the caffeine after lunch. Nicotine is a stimulant and can cause withdrawal symptoms during sleep. Alcohol can reduce the quality of sleep.

Four or five years ago I was dealing with horrible anxiety and depression. I would get panic attacks at night and dreaded going to bed. What made it worse was that I was alone at night. My husband worked 3rd shift and I was left with just my obsessive thoughts, fear and panic. I had to fall asleep with the TV on just to not be left alone with my thoughts. The lack of sleep made my condition worse!

Here are some ways I have dealt with anxiety and insomnia:

*I kept a journal. I wrote down my thoughts so I wouldn't have to think them anymore and could relax.
*I practiced deep breathing. In through the nose and out through the mouth.
*I used a relaxation technique where I systematically contracted and relaxed all the major muscles in the body starting from my toes all the way to my head until I was completely relaxed.
*If my thoughts started to get out of control, I would count backwards from 100 by three's. 100, 97, 94, 91, 88.....and so on. Try it! It's hard and you can't think of anything else while you are doing it.
*I stopped watching the news, CSI or ER before bed or ever! Disturbing stuff! I hated those episodes of ER when someone came in with a simple headache or nosebleed and by the end of the episode they were dead. I had anxiety about my health, so I knew I needed to stop watching those shows that put weird, obsessive thoughts in my head.
*Change your room around if you can. If you dread going to sleep, try putting your bed in a new spot to create new associations.

I hope some of these tips can help you. There is nothing worse than not being able to sleep!

How to Keep a Positive Attitude

This has been a difficult post for me to write. I have a tendency to "look" like a positive person and even "talk" like a positive person, but inside I struggle with a lot of negative thoughts and feelings about myself and my situation in life. I think many of us do. When I feel myself slipping into a pattern of negative thinking, these are some of the things I try to do.

1. Count my many blessings- Sometimes I get into the pattern of wishing this or that could be different. So much so that I don't acknowledge the the ways that I have been richly blessed. Sometimes when I pray, I challenge myself to only give thanks. I don't ask for anything. I just list all my blessings and thank God for all the good things He has given me. I usually end up in tears, but happy tears are good.

2. Be thankful for my challenges- Yes, that's right. Be thankful for the hard times in life, because they will make you stronger and cause you to grow as a person.

There is a law in medicine called Wolff's Law. It states that bone in a healthy person or animal will adapt to the loads it is placed under. If stress on a particular bone increases, the bone will remodel itself over time to become stronger to resist that sort of loading.

I think that the same principle applies to us. Over time, with determination and faith, we can be strengthened as individuals to bear the loads we are asked to bear.

I see this all the time in my work as a Physical Therapist Assistant. One example that stands out to me was a man who had sustained a traumatic brain injury by falling off a roof. He was working so hard to relearn some of the simple daily activities that we do with out thinking. About 3 weeks into his rehab, were walking together with his 3 IV poles when he saw a lady on a mat who looked like she was in a lot of pain. She had recently had a knee replacement and was working with a therapist to get it to bend. My patient who had endured a life altering injury leaned over to me and said, "Glad that's not me!"

He was learning to deal with his challenge. He was being strengthened to bear his load so it didn't seem so heavy anymore. And isn't it true that you can look at other people's problems and be instantly thankful for your own!!! It keeps it all in perspective.

3. Forget myself and help others- There is something very spiritual about helping others. When I set off to help others, I am the one who gets blessed. I feel happy, peaceful, content...positive.

4. Exercise and eat well- I can tell you from personal experience that this works! I have dealt with postpartum depression with all my kids. After my second child, I was having daily panic attacks and I felt like I was in a dark hole that was impossible to escape. I felt alone and hopeless. I started talking to a therapist and learned how to cope with the anxiety. I knew that a lot of my anxiety stemmed from concerns about my health, so I decided to get really healthy so I wouldn't worry anymore. I hired a trainer and it changed my whole way of thinking. He helped me get into the best shape of my life. I became stronger physically and also personally. My confidence grew and I had a passion that I enjoyed. I became an endorphin junkie! My whole way of thinking changed and I have not had a problem with panic attacks or irrational, obsessive thoughts since.

5. Remember....- One of the most important words we use. When I feel overwhelmed and hopeless, I try to remember challenges that I (with help from above) have overcome in the past. I try to remember the good that came out of those hard times. I try to remember that, just as in the past, I can overcome hardship. I will learn. I will become stronger. Maybe some good will come of it. Maybe in the future I can help others who are going through the same thing.
I'm thankful that I have kept a journal in certain periods of my life. It is kind of amazing to look back and see how some of my darkest and lowest times opened me up to new understanding about life.

How I Plan to Relax and Enjoy this Summer

I need to learn how to relax and enjoy the simple pleasures of each day. I've had the tendency to always look forward to the future. I love to cross days off of my calendar. Why do I do that? What's the rush?

My goal this summer is to relax enjoy the simple pleasures of:

My Kids:
They will never be this age again. Time flies so quickly.
-I want to watch them catch fireflies and maybe join in on the action.
-I want to take them on walks to the park and catch them as they speed down the slippery slide.
-I want to take them to the quaint street fairs at night and see the carnival lights flicker in their wide eyes.

Nature:
-Is there anything better than the sound of the ocean? I hope this summer I can walk up and down the shore at dusk and feel the cool ocean breeze and not be thinking about tomorrow or money or any of my stupid worries.

My Community:
There are so many things I enjoy in the summer, and I don't need to go far to find them.
-I love to find treasures at yard sales, early Saturday mornings.
-We have free movies for the kids at our local movie theater every week.
-Have you ever been to a major or minor league baseball game on a cool summer night? There is something about a lit baseball field that is magical to me!
-I'd also like to check into the local theater groups who put on outdoor performances. That would be so fun!

Cooking and Good Food:
I really love to cook and try new recipes. It is such a simple way to bring friends and family together. I'm actually a terrible host. I'm always so worried about things being perfect that I can hardly enjoy myself.
-I want to be more relaxed and focus on the people rather than perfection.
-I want to eat outside when the weather is cool and breezy.
-I look forward to cooking vegetables from our garden.

Quiet Time:
Life is crazy. Work, kids, chores, exercise, church, family, responsibilities. It hardly seems like there is time to just be quiet.
-I want to take time for me. To relax, take a nap, read a book, pray. No TV, no radio, no computer, no distractions.
-Take time to write in a journal. Record the ups and downs of life and reflect upon the blessings with which I have been blessed. Sometimes the "busyness" of life clouds my ability to see the small miracles of every day.

How to Stay Fresh and Hydrated in the Summer Heat

I have always been a summer girl. I grew up in the perfect weather of Southern California and was a resident "sun worshiper". We didn't have air conditioning in our house back then, but a few fans in the house could keep us cool. It was definitely hot, but there was the cool ocean breeze to cool you off.

When I got married, 10 years ago, I moved to Pennsylvania and learned what a sticky and uncomfortable summer was all about. Now I dread summer!

The summers here are all about thick humidity, afternoon thunder storms and never feeling cool, unless you are indoors with the AC cranked up full blast. I've noticed that the only time I talk to my neighbors is in the spring and fall. The winter is so dang cold and the summer just makes you feel sticky and gross. All you want to do is hide inside!

So how can you stay fresh and hydrated in the summer, especially when it is hot and humid? Here are some tips:

*If you are wanting to work in your garden or exercise, try to do that in the early morning or evening when the temps start to go down.

*Eat lots of ice cream and Italian ice.

*Watch Ice age with the kids and pretend you are snowed in.

*Drink lots of water. If you get bored of plain old water, add some Crystal Light. There are so many flavors, pick out a few or try them all!

*If you are working outside in the heat of the day, twist and pin a wet, thin towel around your neck filled with plenty of crushed ice. The ice melts and the cool water runs down your back wetting your shirt providing even more cooling.

*Eat watermelon. It is 90% water!

*Keep a spray bottle handy. A squirt in the face will feel so good! Hey...how about a squirt gun fight for the kids!

*Clean out your freezer. Enjoy the cold.

*Keep water in your car....just in case you break down. You never know!

*Smile.

*Wear white.

*Learn how to ice skate.

*Keep a pitcher of water or Crystal Light in the fridge and drink from it all day. Make sure you drink at least 64 oz every day to stay hydrated.

*Swim

*Stock up on plenty of fresh fruits and vegetables. Try your local farmer's market.

*Make ice pops in the ice cube trays. Try making Crystal Light pops for a cool treat.

*Go to the movie theater and see a good summer action flick! I always have to take a jacket in there even in the middle of the summer! Burrrr!

*Wear less makeup but make sure to wear sunscreen.

*Drink water at each meal.

*Try not to think about global warming. ;)

A little while ago I got an email from an online clothing store, called eShakti, to review an item of my choice from their site. I was excited, but a little nervous that I would hate their clothes. Know what I mean? I just didn't know what to expect from the name eShakti. So, I went to their site and knew, just from home page that I LOVED their clothes. Do you want to hear the best part about eShakti? All of their clothes are customizable for a small fee. Meaning....if the dress you like is sleeveless and you want sleeves, all you have to do is pay $15 extra and choose what sleeve length you would like. That means a lot to me. I always wear sleeves and I can't tell you how many times I have found a great dress, but didn't buy it because it was sleeveless. They can also change necklines and lengths of tunics, dresses and skirts.

Another great thing is that all of their styles come is sizes 0-26W. I happen to be in the plus size range and I so appreciate having cute stuff that comes in my size. I may not be happy with my how I look right now, but I really believe that it is important to dress confidently and to feel beautiful.

So, after hours looking on the eShaki site, here is the dress I picked out:

Now, I am self conscious about my arms and I knew that I would feel more comfortable with an elbow length sleeve. So...that is what I asked for.

Last week my husband and I went on a date to Carrabba's Italian Grill. I was selected to do a review of the smaller portion size servings on the menu and I totally jumped on that one! I love eating out and trying new foods. I especially love having an excuse to get a babysitter for the kids and just enjoying a night out with my husband.

This was our first time to Carrabba's. We went to the Lancaster, PA location which is about a 40 minute drive for us. We don't usually head down to Lancaster very often, but think we just found a new excuse to visit more often.

When we walked in there was an immediate relaxed and warm atmosphere. The restaurant was very open, but still cozy. There were tables that could seat larger parties and comfortable booths for smaller parties. You could see and hear the chefs cooking away in the exposed kitchen. As a hopeless foodie, I loved that.

Our server greeted us and asked if we had ever been to Carrabba's before. When she heard that it was our first time, she kind of looked shocked at first, and then she proceeded to tell us all the things we needed to know. I was impressed, as she explained the menu, that everything is made fresh. That meant that my husband, who has a violent hatred of tomatoes, could request that they be left out of a certain dish. She basically told us that we could add, omit or substitute anything on the menu. Her words were, "If we have it in our kitchen, we can do it!"

Next, our server brought out a small, warm, sliced loaf of Italian bread. You know the kind that is deliciously crusty on the outside and soft on the inside? She also brought a small plate that had a mixture of herbs, spices and garlic. I was getting excited for what was next. She drizzled some olive oil over the spice mixture and left us to experience the simple pleasure of good, basic ingredients, that combined, make magic.

Now to order. On the menu you will see that some entrees give the option of a small or regular portion. I ordered the small portion of Pollo Rosa Maria which is grilled chicken breast stuffed with fontina cheese and prosciutto, topped with mushrooms and a basil lemon butter sauce. My husband had the small portion of Pork Chop Marsala which is a center cut pork chop topped with mushrooms, prosciutto and a Lombardo Marsala wine sauce. In all there were 8 different entrees that had the small or regular portion.

The smaller portion seemed to run about $2 less than the regular serving size and the nice thing is that you still get soup or salad before your entree.

I had the Pasta Fagioli soup and my husband had the Sicilian Chicken soup. They were both excellent. The chicken in the Sicilian Chicken soup looked like it was just pulled from a whole chicken breast. The pieces were so big, my husband had to use a knife to cut it into smaller pieces. He kind of liked that they weren't skimpy with the chicken. I loved the Pasta Fagioli. It was simple and so savory. I need to find a good knockoff so I can make it at home. Carrabba's also has a Minestrone that is offered everyday.

At this point I was glad that I was ordering a smaller portion. From the bread and delicious soup, I was starting to get full!!!

Soon after we finished our soup, our entrees were served. My plate had a very generous portion of redskin mashed potatoes and one serving of the Pollo Rosa Maria. I am assuming that the regular portion has two chicken breasts. I was more than happy to savor just one portion the grilled chicken and the subtle basil lemon butter sauce with a forkful of mashed potatoes.

I know that a second portion of chicken would have gone home with me in a box for the next day's lunch. I finished feeling full, but not so stuffed that I was uncomfortable.

My husband raved about the Pork Chop Marsala. I had a bite and I must say that it was bursting with flavor. I am getting that next time! I was happy to hear him say that the small portion size was perfect for him. He was completely satisfied.

The other good thing about smaller portions is that maybe you will still have room for dessert. We didn't this time, but I am eying these Bachini, "little kisses", for next time!

I want to thank Carrabba's Italian Grill for this fun opportunity to review their smaller portion size menu options. I was so impressed by the flavors, freshness and great service. I would gladly recommend this restaurant and smaller menu potions to anyone who understands the saying that "great things come in small packages!"

Review: Werther's Sugar Free Hard Candies

Most of my readers at, Cheat Day Cafe, know that I started a Biggest Loser competition at my church on March 1st. I needed a gimmick to get me motivated to eat better, exercise and lose weight. I am happy to say that in the last month, I have lost 14 pounds! It has been such a good thing for me.

The key for me has been to calm my raging sweet tooth!

You know what I realized this month? I realized that I can completely relate to a smoker or a coffee drinker who HAS to have a cigarette or a coffee after a meal. Everybody knows that they are the best regular caramels on the market, and you just get the sense that the people at Werther's don't like being second best. So I was sure that these sugar free candies would not be a disappointment.

I was lucky enough to sample all of the Werther's Sugar Free Hard Candies. There is the Werther's Original Caramel, Caramel Mint and Caramel Coffee. Each of these recipes include real butter and fresh cream. How could that NOT be a winner? They were all delicious! I knew that my favorite would be the Caramel Mint before I even tried them. I am just a mint kind of girl!

The newest flavor that will be out at Wal-Mart in April is Caramel Cinnamon. What a yummy, warm combo that is!

I think that using sugar free candies is a great way to incorporate sweets into my diet without going completely off track.

DiGiorno 200 Calorie Pizza and $200 Visa Card Giveaway!

About a year ago, I started my food blog called "Cheat Day Cafe". I love to bake and cook (and eat), but I am also almost constantly on some sort of a diet. I've been like this for a long as I can remember. I called my blog "Cheat Day Cafe" because to keep my sanity, I would give myself one day of the week where I could eat, bake or cook whatever I wanted. A cheat day. And I have been a chronic cheater of late!

Instead of starting another diet that never works, I decided that this year I would just make healthier choices in my diet. I'll eat good things in moderation and not be obsessed with food. Well, I'm not sure if the latter will ever happen, but I have enjoyed not being focused on what I can't have and more focused on just eating what I want in moderation.

So, I was thrilled when I was selected to do a review of DiGiorno 200 Calorie Pizza. They came in 3 different varieties: Pepperoni, Cheese and Tomato and Chicken with Peppers and Onions. Each box came with 2 perfectly proportioned servings which were 200 calories each.

So here is my review:

I decided to make the pepperoni pizza and tomato and cheese pizzas with a salad for dinner. It was just me and the kids, and I knew they would love a pizza night. The servings were smaller than they were used to, but they really enjoyed the flavor of the sauce and the crispy thin crust. My son of course loved the pepperoni and my daughter surprised me when she said that she liked the cheese and tomato the most. She said that it had "pizzazz". I don't know if I spelled that correctly, but I actually agreed with her. There was a freshness to the ingredients that you rarely find in the frozen food section. And it didn't taste like 200 calories. But it was DiGiorno...so what did you expect!

The pizza was a big hit with my kids. With the problem of childhood obesity rising, it is nice to know that there is a delicious, portion controlled option that would fulfill that pizza craving and that a school kid could easily pop into the microwave.

Last but not least, I saved the chicken with peppers and onions pizza for me and me alone! It was in the freezer over the weekend and I took one of the servings to work on Monday. My husband actually begged me to take it because he had been having "to beat the kids off with a stick" to keep them away from my pizza that I need to review. Again, I was so pleased with the freshness of the ingredients and the crust....YUM! As I finished my lunch, I realized that I had eaten slowly, enjoyed the flavor and that I wasn't hungry for anything else. I can just have one piece and feel satisfied! Who knew?

So if it's not "cheat day" yet and you are looking for a single serving of a really satisfying pizza, I would highly recommend the DiGiorno 200 Calorie Pizzas found in the freezer section of your grocery store.

Petite Treats = Big Satisfaction

I must say that I was thrilled to be able to do this review of Pepperidge Farm^® Petite Pirouette^® and Petite Twists^®. Pepperidge Farm cookies have been my personal favorite for many years now.

My mom and dad loved Pepperidge Farm^® Mint Milano^®cookies. I mean, hide them from the kids, loved them. Can you relate?

I'll never forget when I found my mom's secret stash of Milano cookies when I was a teenager. They were in a low cupboard, in a sauce pan with its lid on. INGENIOUS! What kid is ever going to go and look in the sauce pans? Well, I guess eventually I did, but I wonder how long she had been using that hiding spot. Moms are so smart! But those were her sweet indulgence in the day when she just needed a break.

Well, now I am a mom of three hungry kids who always want my treats. So, yes, I have resorted to a secret stash too. But sometimes you need something yummy, just for you.

What I love about the Pepperidge Farm Petite Pirouette and Petite Twists is that they look and taste like a guilty pleasure, but in reality, you don't have to feel guilty at all. Let me introduce you to these special treats.

Petite Pirouette is a delicate, crispy rolled wafer with creamy, chocolaty filling on the inside. Try either the chocolate hazelnut or chocolate crème flavor - or both! Three Petite Pirouette rolled wafers add up to 90 carefree calories!

Petite Twists puffed pastries have layers of delicate, crisp pastry swirled with sweet cinnamon or raspberry. A delightful treat with 90 calories in two treats!

Now, these petite treats are perfection by themselves, but they take one of my favorite indulgences to the next level. Ice cream! I made these sundaes in the spirit of the petite treats. They are high impact visually and on the taste buds, but very forgiving when it comes to your waistline. P.S - Sharing is optional.

Petite Pirouette Sundae

Doesn't that look good?

All I did was layer:

1/4 cup light vanilla ice cream
1 TBSP sugar-free hot fudge
thinly sliced banana

Repeat layers and top with light whipped cream and a Chocolate Crème or Chocolate Hazelnut Petite Pirouette.

When I took a bite of the Cinnamon Petite Twists, I tasted a flaky apple pie crust. Oh yum! So I decided to make an apple pie topping for reduced fat vanilla ice cream with this perfect, flaky, Cinnamon Petite Twist as the crust. Here is the recipe for the topping:

Apple Pie Ice Cream Topping

Ingredients

4 large apples, peeled and sliced
1/2 cup packed brown sugar
4 tablespoons water, divided
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 tablespoon all-purpose flour
1 teaspoon vanilla extract

Directions

In a large skillet, combine the apples, brown sugar, 2 tablespoons water, cinnamon, nutmeg and cloves. Cook and stir over medium heat for 4-7 minutes or until fruit is tender.
In a small bowl, combine flour and remaining water until smooth; stir into skillet. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat; stir in vanilla. Serve over ice cream. Refrigerate leftovers. Yield: 3 cups.
